Owner Dinesh Maheshwari trained as an architect in Rajasthan before he ever ran a kitchen — first as supper clubs, then here on Burton Road. It shows in how every plate leaves the pass.
Head chef Mamrej Khan earned a Michelin mention at Mint Lounge in Bath and carries a repertoire of some eight hundred dishes across India's regions. At Indique that means the real thing: own seitan, own paneer, spicing tuned by region rather than one gravy stretched across a laminated menu.
